Scrambled eggs, bacon, avocado, & tomato over seasoned potatoes. From First Watch, in Kansas City.

Yesterday T and I hit the road. He will be back next week, but this was pretty much the last time I will be in Texas.  We spent the night in Kansas City and hit up a place down the street from our hotel for breakfast.  This skillet sounded like a bit of a strange combo, but I think avocado and bacon make pretty much everything better, even scrambled eggs.

“Eggs a la Greek” – gyros strips, scrambled eggs and fried potatoes.
We’ve frequented Tony’s, a cute little neighborhood diner/cafe near our house, almost since the day we moved in, about 6 years ago.  I almost always get breakfast tacos, but today, I decided to try something a little different.  I actually have a rather unhealthy fixation on gyros, so it’s kind of weird that I’ve never tried this dish before now.  I ended up making little gyros, egg & tzitziki sandwiches with the pita.  Super yum.

My cousin was in town for a visit this past weekend, and we decided to check out the brunch at Blue Mesa. I’d never been there for brunch before and I have to say, I was astounded by the huge selection of food, including made-to-order omelets.  Most of the buffet items didn’t make for very pretty pictures once scooped and heaped on a plate, but it was all delicious nonetheless.
