vegan pesto pizza

As I’ve mentioned before, I gave up dairy a few months back. Overall, it wasn’t nearly as hard as I thought it would be, but one of the things I miss the most is pizza. I don’t care for any of the fake cheese substitutes, but I thought I’d give cheese-less pizza a try. This is my usual whole wheat dough, topped with another Pinterest find, chickepea basil pesto from this blog, portabello mushrooms, Gimme Lean veggie sausage, fresh roma tomatoes, and then drizzled with just a bit of olive oil. It was actually pretty good, but still not as satisfying as the real thing. I think I may brush the dough with olive oil and put the pesto on top of the veggies next time.

Canned quartered peaches (left) and peach pie filling (right)

Continuing on my crazy canning kick, I decided to take advantage of cheap peaches and made up a large batch of peach pie filling and then just canned the rest mostly whole, in juice, for my fruit-crazy daughter to eat this winter.

Sorry folks, lots going on, plus I’ve been sick these last few days.  Playing catchup today, so expect at least a few posts, but some may be from the ‘archives.’

Ok, today’s post is a total cheat. The hubs had to go out of town for work and I did not make or eat anything picture-worthy yesterday, or really today either, for that matter.  I do make this bread fairly regularly though and took this picture a few weeks ago to save for an occasion like this.

The recipe is from my friend Jacki’s blog, and is actually mixed and kneaded in a bread machine first. Then I shape it in loaf pans for the second rise and bake.  I bought a used bread machine just for this purpose and rarely buy bread anymore.  I sub about 2 cups of whole wheat flour for the white.

Celery Pork

A favorite dinner in our house, affectionately referred to as “CelPo.”

The recipe pre-dates my cooking blog, so find it on my crafty blog, here.
