Oven-baked zucchini fries and marinara sauce.
The kiddo is not big on eating veggies, so I’m always on the lookout for new ways to prepare them.  I came across this recipe on Pinterest, and decided to give it a whirl, although not having pecans or spelt flour on hand, I ended up improvising a more traditional breading with what I did have, which was Italian-seasoned breadcrumbs, lots of freshly grated Parmesan, and garlic powder, salt & pepper.  Big hit with the kid, who asked if we can have them every night from now on.
