Lately, thanks to this smitten kitchen post, I’ve taken to shucking the skins off of my chickpeas before pureeing into hummus.  When I first read about it, I thought it was insane, but it really does make for a noticeably smoother texture.  It’s oddly therapeutic to sit there with a bowl of chickpeas, pinching the skins off, and occasionally, E will jump in and do a few too.

Taco Dip
This is another one of my mother-in-law’s specialties – also known as 7-layer dip.  Troy has told me on more than one ocassion that this is one of his favorites, and I’ve had to restrain him in the past to keep him from inhaling about half a pan in one sitting.  It’s layers of bean dip, seasoned sour cream, guacamole, tomatoes, olives, cheese and probably at least one other ingredient that I’m forgetting.  Super delicious.

These muffins are made from a banana bread recipe that my mom has been making for years.  The original recipe called for blueberries as well (I think it might have come from the Michigan Blueberry Association or something like that), but I usually leave them out because hubby doesn’t like the combo.  I used overripe bananas that I’d been saving in my freezer, and I subbed whole wheat flour for about half of the white flour. Also dumped in the rest of a package of chopped pecans I happened to have on hand.  Super yummy.

I made these with my daughter yesterday. On a whim, we dumped in a cup of mini chocolate chips, which got a bit more melty than I expected.  They’re good, but I think I actually like them better plain, which is saying something since I’m a freak for chocolate.

I couldn’t resist picking up some of the first (local) watermelon of the season.  I’m not usually a huge watermelon person, but it was perfectly juicy and sweet.

Since we don’t go through it very fast, I usually chop up the whole melon into large chunks and store it in the fridge.

Spam musubi from L&L Hawaiian Barbecue.  I’m not normally a big fan of spam, but I like these.  Probably should have cut it in half for picture purposes, and well, for eating purposes too since it’s huge.  But I was too hungry to add any extra steps, so I snapped a few hasty photos before wolfing it down.

And I know. Late, late, late. Again. Backdating fools no one. Seems like that’s going to be a theme around here.  Apologies, as I have a lot on my plate right now (no pun intended).  Will try to do better or at least build up a reserve of pics for those off days.

I’m a bad blogger today. Late with yesterday’s post (thank goodness for backdating), almost late with today’s post, and now a cell phone pic for today’s post. And to be honest, not sure if tomorrow will bring anything better.  What can I say, except that it’s hard to eat pretty food every day? Don’t be surprised if by the end of the year, the pics are of things like, a bag of Cheetos and a can of Coke Zero. Ha.
