Ebelskiver – Swedish pancake balls

A few years ago, my mother-in-law got an ebelskiver pan for Christmas, and since then, it’s become something of a tradition/treat for her to make them when we visit.  Forgive the styling, it was all I could do to get this picture before they were gobbled up!

Buttermilk pancakes with (frozen) wild blueberries and turkey bacon.
Since I got breakfast in bed for Mother’s Day, the kiddo and I decided it was only fair that Troy get the same for Father’s Day.  I had to cheat a wee bit on the photo; His plate also included scrambled eggs, with peppers, onions and cheese, but I didn’t want his food to get cold while I took pics, so this is a plate I made after he’d already eaten his.  The pancakes were from this recipe and soooo good.

Cinnamon roll. Yes, singular. We took about 3/4 of it home.

Since we didn’t have the luxury of free breakfast at the hotel this morning, we decided to do a little Yelp search and settled on a diner that was a bit off the beaten path of tourist traps, but still within walking distance of our hotel. Mr. Tim’s Country Kitchen was nothing fancy to look at, but had great food and ENORMOUS portions. This was my chicken fried steak.

We also ordered the kiddo a single pancake, and here’s what arrived. Needless to say, it went largely unfinished.
