Penne with sausage, artichokes & tomatoes
Whole grain penne with sausage, artichokes & tomatoes, topped with freshly grated Parmesan cheese.
This is another regular dish in our menu rotation.  I love it because not only is it very quick to put together, but it’s also very tasty. It’s called “pasta concoction” because it’s something that I concocted one evening based on what happened to be in my pantry/freezer and the ingredients vary depending on what I have on hand.  I’ve also made it with fresh broccoli, spinach, arugula, chicken breasts, etc., but the one constant tends to be the can of diced tomatoes, which adds moisture and brings everything together without getting too saucy.
